FANCY RICE 
1 (8 oz.) can crushed pineapple
2/3 c. instant rice
2/3 c. water
1/2 tsp. salt
1 1/2 c. sm. marshmallows
1 banana, sliced
2 tsp. lemon juice
1/2 pt. whipping cream

Drain pineapple. Keep the juice. Combine rice, water, salt and pineapple juice in pan. Bring to a boil; reduce the heat. Cover and simmer 5 minutes. Remove and let it stand 5 minutes. Stir in pineapple, marshmallows, banana and lemon juice. Cool. Fold in whipped cream. Chill. Serves 6.
