LEMON BUTTERCREAM FROSTING 
1/2 c. of butter, room temperature
1 tsp. grated lemon rind
1 tsp. vanilla extract
Pinch of salt
3 1/2 c. confectioners' sugar
1/4 c. milk
1 tbsp. fresh lemon juice

In a mixer bowl, cream the butter, lemon rind, vanilla and salt until light and about 2 minutes. Add confectioners' sugar alternately with milk until the mixture is creamy and smooth, beating well after each addition. Beat in the lemon juice.

5 stars for taste! It was fabulous. Keep in mind that you can add more powdered sugar to thicken if you want a firmer frosting. Very good recipe.

I used only 2 cups of p-sugar and felt it was sweet enough. I can't imagine it being any sweeter. I added a bit more lemon as well just to cut some of the sweetness. It was thin but still was very good and light. I'd probably use this recipe again but sub cream cheese instead of butter.
