HUMMINGBIRD CAKE 
3 c. flour
1 tsp. salt
2 c. sugar
1 1/2 tsp. vanilla extract
2 c. chopped bananas
1 1/2 c. vegetable oil
1 tsp. baking soda
1 tsp. cinnamon
3 eggs
1 (8 oz.) can crushed pineapple, undrained
2 c. chopped nuts (optional)

Sift dry ingredients into large bowl. Add all other ingredients and stir until mixed. Do not beat. Pour into greased and floured 10 inch angel cake pan and bake at 350 degrees for 1 hour and 10 minutes. Cool in pan. This recipe is great for using bananas that have slightly over-ripened.
