PIZZA DOUGH | |
1 tbsp. active dry yeast Pinch of sugar 1 c. lukewarm water 2 tbsp. olive or vegetable oil 3 c. all-purpose flour 1 tsp. sugar 1 tsp. salt Cornmeal, not too much Pour water into small bowl. Sprinkle the yeast and pinch of sugar over the water. Stir mixture and let stand about 5 minutes. In food processor, fitted with metal blade, combine flour, sugar and salt. Cover processor and turn it on and off a few times. Then with machine running, add yeast mixture, olive oil and mix until dough forms a ball. Stop the machine and check the dough. If it's too sticky, add more flour. Turn the machine on until dough is smooth but not sticky to the touch. Place dough in large greased bowl. Let rise until doubled in size. Punch dough down. Remove from bowl and knead on floured surface. Starting in the center, roll out and stretch the dough to desired shape, turning it over from time to time as you roll. Cover the bottom of the pan with cornmeal, then put dough in pan, stretching to fit. Make rim around edge. Preheat oven to 450 degrees. Cover pizza with damp cloth and let rise 10 to 15 minutes. Garnish with favorite toppings and bake uncovered for 20 to 30 minutes. Yield: 2 (12") round pizzas. See Pizza Sauce recipe. |
