ORANGE - OATMEAL BREAKFAST
MUFFINS
 
1/2 c. Quick cooking oats
2 1/2 c. unbleached flour
1/4 c. sugar or fructose
1 tbsp. baking powder
1/2 tsp. salt
2 lg. eggs
1 c. orange juice
1/2 c. milk
1/4 c. butter, melted
1 tbsp. grated orange peel

Sprinkle oats onto a baking sheet; toast in a preheated 400 degree oven 4-6 minutes or until lightly browned. Leave oven on.

In a large bowl combine oats, flour, sugar, baking powder and salt.

In a medium bowl beat eggs, orange juice, milk, butter and grated orange peel. Pour liquid mixture into dry ingredients, stirring quickly to combine. Do not overmix.

Spoon batter evenly into 10 greased 3 inch muffin tins or into 12 (2 1/2 inch) muffin tins. Bake in a preheated 400 degree oven 20-25 minutes or until golden brown.
