BAKED CUSTARD 
2 eggs, slightly beaten
2 tsp. liquid sweetener
2 tsp. vanilla extract
1/4 tsp. salt
2 c. skim milk
2 drops yellow food coloring
Dash of nutmeg

Combine sweetener, eggs, extract and salt in large mixing bowl. Stir in milk and food coloring. Pour into 6 custard cups. (You may use a 1 quart baking dish.) Sprinkle with nutmeg. Bake in a pan of hot water for approximately 1 hour, until knife inserted 1" from edge comes out clean. (NOTE: Amount of time for baking dish is approximately 15 to 20 minutes longer.) Serve warm or chilled. Oven at 350 degrees. Makes 6 servings. 1 serving = 55 calories.
