IRISH STEW 
6 lg. potatoes, cut into cubes
1 tsp. salt
1/2 tsp. pepper
3 lg. onions, sliced
3 lb. boneless lamb, cut into cubes
3 c. water

In heavy saucepan place layer of potatoes and sprinkle with salt and pepper. Add layer of onions and season. Place layer of lamb on top and season. Repeat until all ingredients are used up... top layer should consist of potatoes... pour water over it and cover. Cook 1 1/2 hours until lamb is tender. Add carrots, celery or tomatoes if desired.
