NORTHERN FRIED CHICKEN 
1 1/2 c. cornbread stuffing mix
1/3 c. grated Parmesan cheese
1 1/2 tsp. seasoned pepper
1/2 tsp. garlic powder
1 broiler-fryer (about 2 1/2 lb.), cut up
1/2 c. butter, melted (1 stick)

Crush stuffing mix with rolling pin to fine crumbs. Combine with cheese, pepper, and garlic powder in a mixing bowl.

Dip chicken pieces first in melted butter, then in crumb mixture. Arrange, skin side up, in a 13 x 9 x 2 inch baking pan or a jelly roll pan that has been brushed with butter remaining from dipping chicken.

Bake in at 350 degrees for 1 hour or until browned and tender.
