ITALIAN LOVE CAKE ALA THERESA 
1 pkg. marble cake mix or chocolate cake mix
32 oz. Ricotta cheese (excess water drained)
4 eggs
3/4 c. sugar
1 tsp. vanilla

ICING:

1 sm. pkg. instant chocolate pudding
1/2 c. milk
8 oz. Cool Whip (thawed)

Preheat oven to 350. Grease and flour 9x12x2 glass baking dish (a slight grey film appears on the bottom of the cake if you use aluminum foil).

Mix the cake mix according to directions. Pour mixture into GLASS baking dish, set aside.

In a bowl, mix Ricotta cheese, eggs, sugar and vanilla. Layer mixture on top of cake. Bake for about 90 minutes or until done.

Mix package of pudding mix with 1/2 cup of milk and Cool Whip. Ice cooled cake. The cake mix bakes up through the cheese.
