LIGHT FRUIT CAKE 
1 c. shortening
2 c. sugar
3 eggs
1 c. milk
1/2 c. white raisins
1 c. currants
3 c. flour
1/2 tsp. salt
2 tsp. baking powder
1 tsp. vanilla
1 tsp. lemon extract
1 c. mixed fruit peels
1/2 c. chopped nuts

Steam raisins and currants over hot water. Sift dry ingredients together. Cream shortening and sugar. Add eggs and flavoring. Mix in flour and milk alternately. Add fruits and nuts. Grease pan and line with brown paper. Makes 2 loaf pans. Bake at 350 degrees for 1 hour. While cake is cooling, brush top with light corn syrup for glaze.
