BAKED SWEET POTATO - APPLE
CASSEROLE
 
1/3 c. light brown sugar
1/4 tsp. cinnamon
1/4 tsp. salt
1 lb. sweet potatoes, sliced & cooked
2 c. thinly sliced peeled apples
1/3 c. raisins
1/4 c. butter
1/3 c. slivered blanched almonds

Heat oven to 375 degrees. Mix brown sugar, cinnamon and salt. Peel potatoes and slice 1/2 inch thick. Cook.

In a 2 quart baking dish, layer 1/2 potatoes, apples and raisins. Sprinkle with brown sugar mixture. Repeat layers. Dot with butter and sprinkle with almonds. Cover and bake 35 minutes. Remove cover and bake 10 minutes longer. Serves 4-6.
