POLYNESIAN WEDDING CAKE 
1 1/4 c. corn oil
2 c. sugar
3 eggs, set aside
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. vanilla
1 tsp. salt
3 1/2 oz. grated coconut
2 c. grated carrots (packed tight)
1 c. chopped walnuts
1 sm. can drained crushed pineapple

Beat together oil, sugar and eggs at high speed until light and fluffy. Set aside. Blend remaining ingredients in large bowl with wooden spoon. Add to sugar, oil and egg mixture. Stir to blend thoroughly. Pour into greased and floured 9 x 13 inch pan. Bake 350 degrees for 50 minutes. Cool and frost.

POLYNESIAN FROSTING:

3 tbsp. warm milk
1/2 c. Crisco (solid)
1/2 c. butter
1 tsp. vanilla
1 c. confectioners sugar
