18 chicken wings Seasoning salt Garlic powder 1 c. Crisco oil Crushed red pepper Ground cayenne pepper 1 med. onion, cut up 2 lg. tomatoes, cut in quarters 1 bunch scallions, cut in sm. pieces Flour Wash chicken wings; do not pat dry. Season with season salt, garlic powder and ground cayenne pepper, then roll in flour. Heat oil in heavy pot. Brown chicken on both sides, half cooking them until all have been done. Pour off grease. Put wings back in pot and add 5 cups water. Bring to a boil; add onions, tomatoes, scallions, and red pepper. Reduce heat to low and simmer for 1 hour, stirring occasionally. Serve over hot rice. |
