FRENCH ONION SOUP 
1-2 lg. Spanish onions, chopped or sliced
2-3 tbsp. butter
2 tbsp. flour
2-4 c. beef broth or bouillon
Mozzarella or Swiss cheese
Bread

Saute onions in butter, adding flour until flour absorbs remaining butter. Add broth. Toast bread. Place toast in oven safe soup crocks or bowls. Pour soup (which has simmer 15-20 minutes) over bread and top with cheese. Put crocks or bowls under broiler or in oven or microwave to melt cheese. Serves 2-4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
