KENTUCKY CREAM CAKE 
1/2 c. vegetable shortening
1 stick butter
2 c. sugar
5 egg yolks
2 1/4 c. all purpose flour
1 tsp. baking soda
1 c. buttermilk
1 tsp. vanilla
1 c. buttermilk
1 tsp. vanilla
1 c. coconut
2/3 c. chopped nuts
5 egg whites, beaten

Cream shortening and butter with sugar. Add egg yolks one at a time. Beat well. Add flour and baking soda alternately with buttermilk. Add vanilla, coconut and nuts. Fold in beaten egg whites. Bake in 2 or 3 (8 x 8 x 2 inch) layer pans at 350 degrees for 35 to 40 minutes.

FROSTING:

1 (8 oz.) pkg. cream cheese
1/2 stick butter
1 lb. powdered sugar
1 tsp. vanilla
1/8 c. chopped nuts

Cream first 4 ingredients. Frost cake. Cover with chopped nuts.
