3 pkg. dry yeast 4 eggs 1/4 lb. butter 3 c. scalded milk 1 tsp. salt 2 c. sugar 1 tsp. vanilla 8-10 c. flour (to kneading consistency) Place yeast in 1/2 cup of lukewarm water to develop. Scald milk in large pot. Add salt, butter, sugar, and vanilla. When milk has cooled enough (lukewarm), add two cups flour. Then add yeast mixture and beat until smooth. Add remaining flour, one cup at a time until dough is kneading consistency (it should be pliable and still a little sticky). Put out on floured board and knead until smooth, about 10 minutes, adding flour to board as necessary. Wash out pot and grease it, including the inside of cover. Place dough in pot, wrap pot in a heavy towel, and put in a warm place to rise until doubled in bulk. Knead dough again on floured board for a few minutes. Grease loaf pans (this will make about 4-5 loaves), shape into loaves and put into loaf pans. Cover with towel and allow to rise again. Bake at 350 degrees until done. If dried fruits or raisins are desired, add after first two cups of flour. |
