BROCCOLI AND CHICKEN CASSEROLE 
6 chicken breasts, deboned & cooked (may substitute if you wish)
3 boxes of frozen broccoli or 1 bunch of fresh broccoli, cooked & drained
1 1/2 c. Minute Rice, cooked and drained
1 can cream of chicken soup
2 1/2 c. chicken broth
1 lb. Velveeta cheese
1/2 pt. mayonnaise

Sauce: Mix cream of chicken and cheese in saucepan, mayonnaise, chicken broth until cheese melts and until it boils. Cook on low heat, stirring constantly.

Layer chicken, then broccoli, then rice. Optional: Mushrooms. Then pour sauce over chicken. Bake 30 minutes at 350 degrees. Optional crushed crackers on top. Handy Hints: Don't substitute Velveeta cheese and mayonnaise as well as Minute rice.
