PORK ROAST--BEEF STUFFED 
3 lb. boned pork loin
1/2 lb. ground beef
1/4 c. chopped onion
1 clove minced garlic
1/4 tsp. salt
Pepper to taste
1 (6 oz.) can mushrooms, drained
1/4 c. dry bread crumbs
1/4 c. Parmesan cheese
Barbecue sauce

Split pork lengthwise, spread and pound to about 15 x 10 x 3/4 inches. Brush with 1/4 cup barbecue sauce. Combine next 5 ingredients and 1/4 cup barbecue sauce. Spread over pork. Press mushrooms into beef. Sprinkle with crumbs and cheese. Roll up and tie. Roast uncovered at 325 degrees for 2 1/2 hours. Baste with barbecue sauce last 15-20 minutes. Pass remainder of sauce.

BARBECUE SAUCE:

Combine 14 oz. bottle ketchup, 1/2 cup chili sauce, 1/3 cup wine vinegar, 1/4 cup brown sugar, 2 tablespoons lemon juice, 2 tablespoons Worcestershire sauce, 2 tablespoons mustard, 2 tablespoons oil, 2 tablespoons steak sauce, 1 teaspoon dry mustard 1 minced garlic cloves. Simmer together 30 minutes.
