CRANBERRY MUFFINS 
2 c. flour
3 tsp. baking powder
1 c. milk
1 egg, beaten
3 tsp. grated orange rind
1/2 c. sugar
1/2 tsp. salt
1/4 c. oil
1 c. cranberries
2 tbsp. cinnamon

In large bowl combine flour, sugar, baking powder and salt. Stir in milk, oil and egg just until blended. Fold in cranberries and 1/2 cup cut nuts and 2 teaspoons orange rind. Spoon into 12 muffin cups. Combine sugar and cinnamon and 1 teaspoon orange rind and 2 tablespoons nuts. Sprinkle over muffins. Bake in 400 degree oven 20 to 25 minutes or until a pick inserted comes out clean.
