SOUR CREAM FROM LOW FAT COTTAGE

This recipe can be doubled, quadrupled, etc. to fit your blender (sometimes a cup of ingredients isn't enough to cover the blades).

Making about a couple of cups at a time works well, and keeps nicely in the fridge. You will just need to give it a quick stir before serving.

This sour cream-like topping for potatoes, made from cottage cheese, is an awesome and guilt-free faux sour cream for baked potatoes!! And the best part is that you are able to serve yourself very generously (a 1/4 cup serving is only 63 calories and 2.5 grams of fat!)

All you need is Knudsen Lowfat 2% Cottage cheese (small curd in pink container) and HIDDEN VALLEY® Light Ranch Dressing.

Spoon 2 cups of Knudsen Lowfat 2% Cottage Cheese and 4 teaspoons HIDDEN VALLEY® Light Ranch Dressing into blender. Blend until very smooth and creamy.

Microwave a small baking potato. When finished cooking, spray on 5 pumps of "I Can't Believe It's Not Butter-Spray Original".

Pop back in microwave for 15 seconds. Top with 1/4 cup of Sour Cream Topping and you have a very yummy treat for under 200 calories! And you won't believe how 2.5 grams of fat can taste like 40!!
