SOUR CREAM & CHEESE ENCHILADAS 
1 pt. sour cream
12 oz. shredded Jack cheese
4 oz. can diced green chilis
1 c. sliced black olives
1 doz. 8" flour tortillas
10-12 oz. can enchilada sauce
2 c. shredded Cheddar cheese

Mix first 4 ingredients in a large bowl. Spread 1/2 cup of mixture in a line on each tortilla and roll up. Place in an 8 x 12 inch pan. Pour enchilada sauce evenly over top. Sprinkle with Cheddar cheese and bake at 350 degrees for about 30 minutes until hot and bubbly.

This Recipe is AMAZING! Hands down the easiest most delicious recipe for cheese enchiladas! My husband and I like to use pepper jack cheese with jalapenos. We also don't use the black olives but everything else is just genius! Amazing! I can't get enough of it!

Both times I have made these enchiladas I received rave reviews. My last visitor to my home in Maui said these should be my signature dish to prepare for anyone visiting me. I like that since I am vegetarian and all of my guests are not, that they can enjoy and love this receipe too. Very easy and quick to make.
