| SOUR CREAM & CHEESE ENCHILADAS | |

1 pt. sour cream 12 oz. shredded Jack cheese 4 oz. can diced green chilis 1 c. sliced black olives 1 doz. 8" flour tortillas 10-12 oz. can enchilada sauce 2 c. shredded Cheddar cheese Mix first 4 ingredients in a large bowl. Spread 1/2 cup of mixture in a line on each tortilla and roll up. Place in an 8 x 12 inch pan. Pour enchilada sauce evenly over top. Sprinkle with Cheddar cheese and bake at 350 degrees for about 30 minutes until hot and bubbly. | |

This Recipe is AMAZING! Hands down the easiest most delicious recipe for cheese enchiladas! My husband and I like to use pepper jack cheese with jalapenos. We also don't use the black olives but everything else is just genius! Amazing! I can't get enough of it!

Both times I have made these enchiladas I received rave reviews. My last visitor to my home in Maui said these should be my signature dish to prepare for anyone visiting me. I like that since I am vegetarian and all of my guests are not, that they can enjoy and love this receipe too. Very easy and quick to make.
