HUSH PUPPIES | |
2 c. white cornmeal 1 tbsp. flour 2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 egg, beaten 6 tbsp. finely chopped onion 1/2 tsp. cayenne pepper (optional) 1 1/3 c. buttermilk 2 c. lard or shortening Combine cornmeal, flour, baking powder, baking soda, and salt in medium-size mixing bowl. Stir in egg, onion, and cayenne pepper. Add buttermilk; beat well. Heat lard in heavy fry pan until hot, about 375 degrees. Drop rounded teaspoonfuls of batter into hot fat. Fry until golden brown, turning once. Drain on paper towels. Wrap hush puppies in Heavy Duty Reynolds Wrap; place in warm oven (250 degrees) until ready to serve. Makes 4 dozen. |
