10 cooked beets, med. size 2 onions, raw, med. size 2 green peppers, med size 2 c. white vinegar 1 1/2 c. sugar 1/4 c. pickling spice 8 to 9 whole cloves 1 tbsp. salt Grind cooked beets, onions and peppers fine. Simmer vinegar, sugar and spices, which have been tied in a bag, about 1/2 hour. Add to beet mixture and cook slowly until it thickens. Put into small jars with rubber seals such as empty baby food jars. Tighten cover and store until wanted. No processing of filled jars necessary. Note: Junior size baby food jars good size. Recipe makes about 6 jars this size. |
