BEIGNETS DE CARNAVAL 
1 1/2 c. self-rising flour
1 c. light brown sugar
2 eggs
3 bananas (well ripe)
1 1/2 c. milk
1 egg
1/2 tsp. cinnamon
1 tbsp. vanilla

Mash bananas; put in the mixer medium speed and add butter and eggs, one at a time. Combine flour, sugar, cinnamon, milk alternatively and last the vanilla.

In a frying pan, heat the oil at medium temperature; when very hot, fry batter using a tablespoon. When golden brown, take them out and put them over paper towel to absorb the grease.
