PORK TENDERLOIN 
2 lbs. pork tenderloin
Salt and pepper to taste
4 tbsp. butter
1-2 tsp. diced thyme

APRICOT SAUCE:

9 oz. apricot preserves
1-2 tbsp. honey
1 tbsp. dry mustard
Garlic powder to taste
1-2 tbsp. dry sherry

Preheat oven to 350 degrees. Spread butter on meat; sprinkle with salt and pepper and thyme. Bake 30-40 minutes. Make apricot sauce. Return to oven and continue baking for 15 minutes more, basting with remaining sauce. Do not overcook. Yield: 6-8 servings.
