FRESH APPLE CAKE 
3 c. flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
2 c. sugar
2 eggs
1 1/4 c. salad oil
2 tsp. vanilla
1 c. chopped nuts
5 c. chopped apples
1 c. raisins

Sift together twice the flour, soda, salt and cinnamon. Add oil and vanilla to sugar, beat until smooth. Add sifted flour mixture and mix to form stiff dough. Stir in apples, nuts and raisins. Pour into greased pan. Bake at 350 degrees for 1 hour or until done.

CARAMEL FROSTING:

Melt 1/2 cup butter in a sauce pan over low heat. Stir in 1 cup dark brown sugar, packed, and 1/4 teaspoon salt. Bring to a boil over medium heat. Boil hard 2 minutes, stirring constantly. Remove from heat; stir in 1/4 cup of milk. Return pan to heat; bring to a boil. Remove from heat, cool to luke warm. Stir 2 cups of confectioners' sugar onto mixture, beat until smooth. If frosting is too thick, beat in a little milk.
