BARLEY STROGANOFF STEW | |
1 lb. beef stew, cut into 1/4-inch strips 1/2 c. chopped onion 1 clove garlic, minced 1 (10 1/2 oz.) can condensed beef broth 1 c. water 1/2 c. barley 2 tbsp. catsup 1 tsp. paprika 1 tsp. salt 1/8 tsp. pepper 2 c. mushroom slices 1/2 c. sour cream Brown meat, onion, garlic in 2 tablespoons oil. Stir in remaining ingredients except sour cream and mushrooms. Bring to boil. Cover and simmer 1 1/4 hours. Add mushrooms and continue cooking for 15 minutes. Remove from heat. Stir in sour cream. Yield: 4-5 servings. |
