RHUBARB MUFFINS 
4 c. brown sugar
1/3 c. oil
1 egg
1/2 c. milk
1 1/2 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. vanilla
1 c. rhubarb

Mix all ingredients together and put in muffin cups.

TOPPING:

1/4 c. brown sugar
1 tsp. cinnamon

Mix together and put on top of muffins. Bake at 325 degrees for 20-25 minutes.
