SURPRISE CUPCAKES 
8 oz. cream cheese (softened)
1 egg
1/3 c. sugar
1/2 tsp. salt
6 oz. chocolate chips

BATTER:

3 c. flour
1 tsp. salt
2 tsp. baking soda
2 tbsp. vinegar
1/2 c. cocoa
2 c. sugar
2/3 c. vegetable oil
2 c. water
2 tbsp. vanilla

Combine filling ingredients except chocolate chips. Beat until smooth and add chips; set aside. Sift together all dry batter ingredients. Add all liquid to dry ingredients and mix until smooth.

Fill cupcake tray 1/2 full of the batter and top with a teaspoon of the filling. Bake for 25 minutes at 350 degrees. Freeze very well.
