Peel & slice eggplant (1/2 to 3/4 inches).
2 choices: 1) Dip egg plant in milk, then seasoned flour, then egg, then bread crumbs. Breading stays on better this way. OR 2) Lazy method. Combine and beat milk and eggs. Dip in bread crumbs.
2 choices to cook: 1) If eating immediately, fry in fry pan with some oil - both sides - over medium-high until browned. OR 2) Better way. Put on cookie sheet and bake until brown (approximately 1/2 hour) then fry in pan when you're ready to eat. They are easier to get done without burning them this way.
Put sauce (spaghetti) over top on hamburger bun, or pita bread; put on slice of cheese and eat.
