Have always heard of this cake - but never had it. I am a lemon lover - so will try the version by Rick in Ohio. May find a way to include some lemon zest someplace.

I have a different variation of this cake: I make this cake with a pineapple flavored cake (it's kind of hard to find, usually Duncan Hines has one), I use strawberry jello, and then I put either french vanilla or cream cheese flavored pudding on top of that. Finished off with a huge carton of cool whip on top of the cake! It's delicious and I like it way better than all vanilla flavoring when someone I knew made it originally, I just made my own version of it. Enjoy! -Deana

I have been making this for years from a recipe my grandmother used. The difference being that you make a small box of instant pudding and fold the Cool Whip into it then frost your cake. My favorite is to pour raspberry jello over the cake. Then frost it with lemon pudding/Cool Whip mixture. Then fresh raspberries on top of the cake. It's pretty and a good flavor combination.

My Grandma made this cake for years and it is so good with cherry jello. In addition to the Cool Whip on top, she would then carefully spread a can of cherry pie filling on top of the cool whip...made it extra good!

I make the lemon cake with Lime jello and it is amazing. For the frosting, mix lemon frosting with contaner of cool whip and frost the cake. For Lemon cake lovers ONLY!
