ZUCCHINI PANCAKES 
2 zucchinis
1 tsp. salt
1 c. whole wheat flour
butter and oil (for pan)
Applesauce or butter for topping
2 eggs
Freshly ground pepper
2 tbsp. yogurt or sour cream

Shred zucchinis (peel skin if tough). Beat eggs with whisk; add salt and pepper. Stir in whole wheat flour (little portion at a time). Add 2 tablespoons plain yogurt or sour cream. Place small amount of butter and oil in pan. Brown well on both sides. Luscious with hot applesauce or butter.
