BROWN SODA BREAD | |
6 c. white unbleached flour 2 c. Quaker Bran 1 to 2 tbsp. wheat germ 1 1/2 tsp. bread soda 1 tsp. salt 2 oz. butter 1 tbsp. sugar (opt.) 1/4 tsp. nutmeg 1 1/2 pts. buttermilk 1 egg Preheat oven to 425 degrees. Sift flour, salt and baking soda into a mixing bowl. Stir in bran, wheat germ, sugar and nutmeg. Mix well with your hands, lifting ingredients high and letting dry ingredients fall back into the bowl. Rub the butter into dry ingredients and make a well in the center. Add the buttermilk and beaten egg all at once. Mix to a soft dough using a fork. Turn out onto table dusted with flour. Knead lightly and sprinkle with some extra flour if dough is sticky. Shape into a round and cut into quarters. Place on a greased baking sheet. Brush top with beaten egg or milk (optional). Bake for approximately 35 to 40 minutes. Test by tapping the base - it should sound hollow when fully baked. |
