APRICOT CAKE 
1 1/2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. apple pie spice
1/4 c. butter
1 c. sugar
1 c. canned sweetened applesauce
1/2 c. chopped dried apricots
1 c. chopped walnuts

Stir together flour, soda, salt and spice. Cream butter and sugar; add applesauce and beat to blend. Gradually add the flour mixture, beating gently until smooth after each addition. Stir in the apricots and nuts. Turn into a greased and floured 8 x 8 x 2 inch cake pan. Bake in a preheated 350 degree oven until a cake tester inserted in the center comes out clean, about 45 minutes. Let stand on wire cake rack for 5 minutes; turn out on rack; turn right side up. Cool completely.
