BAR - B - QUED BEEF | |
1 lb. beef cut in 1/2-inch sq. (I use beef stew) 1 tbsp. fat 1 1/2 c. water 1 med. onion, chopped 1/2 c. diced celery 1/3 c. diced green pepper 1 c. ketchup 1/4 c. brown sugar 2 tbsp. vinegar 2 tbsp. Worcestershire sauce 1 tsp. salt 1 tsp. chili powder 12 to 16 hamburger buns, toasted Brown cubed beef in hot fat. Add water and simmer in a covered skillet 1 1/2 hours, or until the meat is tender. Reserve broth, adding enough water to make 2/3 cup. Break beef into small pieces. (Use blender to chop.) Cook onion, celery and green pepper in fat until tender but not brown. Add the beef, broth and remaining ingredients. Simmer uncovered 20 to 30 minutes, or until the mixture thickens sufficiently to serve on the toasted buns. This main dish is just right for patio eating. |
