ITALIAN HERITAGE HOTDOGS 
1 pkg. king-size beef franks
7-8 med. potatoes
1 med. to lg. onion (3/4 c.)
3/4 oil
Salt (to taste)
Pepper (to taste)
4-5 sweet pickled peppers
8 long rolls (hard rolls or long hotdog rolls may be used).

Preheat oven to 375 degrees. Pour oil into 9 x 12 x 2 1/2-inch pan. Peel potatoes, cut into 3/4-inch cubes and place in pan. Slice onion and peppers thinly and spread over potatoes. Add salt and pepper. Cover with foil and cook for approximately 35 minutes.

Remove from oven and drain off the excess oil. Cut hotdogs into 3 pieces and place in pan. Recover and heat in oven for 15 minutes, then uncover for another 10 minutes. Serve with or without rolls. Serves 6-8 people.
