APPLE - FILLED BRAN MUFFINS 
1/3 c. chopped apple
1/4 c. chopped walnuts
2 tbsp. brown sugar
1 tbsp. butter, softened
1/2 tsp. cinnamon, ground
1 1/4 c. all-purpose flour
1/3 c. granulated sugar
1 tbsp. baking powder
1 tsp. salt
1 c. whole bran cereal
1 c. milk
1 egg, beaten
1 tbsp. cooking oil

For apple filling, in small bowl stir together apple, nuts, brown sugar, butter and cinnamon; set aside. Stir together flour, sugar, baking powder and salt.

In another bowl, stir together cereal and milk; let stand for 5 minutes. Stir egg and oil in cereal mixture. Add cereal mixture to dry ingredients; stir until moistened. Line pan with paper baking cups. Spoon half full with batter. Bake at 400 degrees for about 20 minutes. Serve warm. Makes 12 muffins.
