CREAM OF CRAB SOUP 
2 tbsp. butter
1 tbsp. flour
2 quarts milk
1 med. onion, chopped
2 tsp. chopped parsley
1 stalk celery, chopped
1 tsp. salt
1/2 tsp. pepper
3 c. cooked crab, flaked

Cream the butter and flour together and add to milk in double boiler. Add the vegetables and seasonings and cook slowly for 30 minutes, stirring every few minutes, until soup is well blended and thickened. Add the crab flakes, cook 10 minutes longer.

This is a lovely basic cream of onion, cream of celery soup based crab soup.

It will take more than 30 min to soften the onions and celery, however, so make sure they are soft before removing the soup from the double boiler.
