CHEX RAISIN MUFFINS 
2 1/3 c. Multi Bran Chex cereal, crushed to about 1 c.
1 c. flour
2 tbsp. brown sugar
1 1/2 tsp. baking powder
2 tsp. cinnamon
1 tsp. vanilla
3/4 c. skim milk
1/4 c. apple juice concentrate
1/3 c. vegetable oil
1 egg (or 1/4 c. cholesterol free egg product)
1 c. raisins

Mix ingredients in order listed. Use paper cupcake cups for cupcake tins. Bake at 350 degrees for 15 minutes. Do not overbake, cupcakes will be moist and are especially good when warm. Makes 12 muffins.
