3 eggs, beaten
2 c. grated, peeled zucchini
1 c. oil
2 c. sugar
2 tbsp. vanilla
1/2 c. cocoa
2 1/2 c. flour
1 tsp. salt
1 1/2 tsp. baking soda
2 1/2 tsp. baking powder
1 c. chopped nuts (optional)

Mix eggs, oil, sugar, zucchini, vanilla until well blended. Mix flour, salt, soda, baking powder and cocoa in another bowl. Pour flour mixture into zucchini mix, add nuts. Blend well. Bake in 10 inch tube pan or 2 bread pans (grease and floured) at 350 degrees for 45 minutes to 1 hour. Very moist. Tastes just like brownies.
