MINCEMEAT 
2 lb. lean beef or veal, chopped
4 lb. apples
2 1/2 lb. raisins
4 c. brown sugar
1/2 tsp. cloves
1 1/4 tsp. nutmeg
1 1/2 tsp. cinnamon
1/2 tsp. mace
1/2 tsp. salt
1/2 lb. suet, ground
1/4 lb. citron, ground
1/2 c. molasses
Grape juice or cider or water

Pare, core and chop apples. Combine with remaining ingredients. Add water, cider or grape juice to moisten. Simmer until meats and fruits are tender, and flavors are blended. If desired, any other fruit juice may be substituted. Pack in freshly sterilized jars and seal.
