PORK CHOP CASSEROLE OR CHICKEN
BREAST CASSEROLE
 
3/4 c. rice, raw
4 pork chops or chicken breasts, de-boned
1 can beef or chicken broth
1 onion, sliced
1 fresh tomato, thickly sliced
1 bell pepper, thickly sliced

Place raw rice in bottom of casserole dish. Top with meat. Place a slice of onion, a slice of tomato and a slice of bell pepper on top of each piece of meat. Pour broth over all and cover with foil Bake 1 hour at 375 degrees.
