POTATO SALAD 
6 potatoes
1 onion, chopped
3 hard boiled eggs, sliced
1 c. celery, chopped
1/2 c. green peppers, chopped
1 cucumber, diced
1 1/2 tsp. salt
1/4 tsp. paprika
1/4 c. French dressing
Mayonnaise

Cook potatoes in jackets; cool, peel, and cube. Combine all ingredients, except dressings. Marinate in French dressing and chill for 4 to 6 hours. Just before serving, add mayonnaise and mix carefully. Line salad bowl with lettuce; fill with the salad. Garnish with hard boiled egg slices. Sprinkle with paprika or parsley. Makes 8 servings.
