MEXICAN PIE 
2 lbs. ground beef
2 cups Spanish Rice
2 cans refried Beans
2 cups grated Cheddar Cheese
1 pkg. cornbread mix
1 medium finely chopped onion
salt, paprika, garlic powder, to taste

Toppings:

Rotel
Sour Cream
Shredded Lettuce
Diced Tomatoes
Chopped Chives

Preheat oven to 350°F.

Season and brown ground beef in a skillet. Drain and set aside.

Cook Spanish rice in a skillet and set aside.

Season and heat up refried beans in a skillet and set aside.

Mix cornbread in bowl and set aside.

Layer the ingredients into a greased 13 by 9 baking pan as follows:

1. Browned ground beef
2. Chopped onions
3. Cooked Spanish rice
4. Heated refried beans
5. Grated Cheddar cheese
6. Cornbread batter

Bake in oven for about 10 to 12 minutes or until cornbread is golden brown or if you insert a knife, it comes out clean.

Serve hot.
