SWEET BLUEBERRY MUFFINS 
1 egg
1/2 c. milk
1/4 c. salad oil
1 1/2 c. all purpose flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1 c. fresh blueberries or
3/4 c. frozen blueberries, thawed and well drained

Heat oven to 400 degrees. Grease bottoms of 12 medium muffin cups (2 3/4 inches in diameter) or line with paper baking cups. Beat egg; stir in milk and oil. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy.

Fill muffin cups 2/3 full. Bake 20 to 25 minutes or until golden brown. Immediately remove from pan. Makes 12 muffins.
