TOASTED COCONUT PIE 
3 eggs, beaten
1/2 c. melted butter
1 tsp. vanilla
2 tsp. lemon juice
1 1/2 c. sugar
1/2 c. coarsely chopped pecans
3 1/2 oz. flaked coconut
1 unbaked pie shell

Preheat oven to 350°F. Combine eggs, sugar, butter, vanilla and lemon juice. Stir in coconut and pecans. Pour into pie shell and bake for 45 or 50 minutes.
