AUNT KAY'S APRICOT KOLACHI 
1 1/2 lbs. butter
12 c. all purpose flour
3 c. sugar
2 lemons (use only the juice and grated rinds)
6 tsp. baking powder
1 1/2 tsp. salt
12 egg yolks
2 cans prepared apricot filling

Mix together butter, sugar and egg yolks. Add lemon juice and grated rinds. Add flour, baking powder, and salt. (If dough is too moist, more flour may be added until dough is easily rolled out on pastry board). Roll dough out to about 1/8 inch thickness. Cut into 2 inch squares. Place 1/4 teaspoon apricot filling in center of each square and fold opposite ends of dough square toward center. Bake on lightly greased cookie sheet at 350 degrees for 20 to 25 minutes.
