ORANGE GLAZED CHICKEN | |
1 broiler fryer chicken, weighing about 3 lbs., cut into serving pieces 1 1/4 tsp. salt 1/4 c. melted butter 1/4 c. honey 1 can (6 oz.) frozen orange juice concentrate, thawed 3/4 c. regular wheat germ 3/4 c. all purpose flour 1 tsp. paprika 1/4 tsp. thyme leaves, crushed Sprinkle chicken with salt; brush with melted butter; set aside. Mix together honey and orange juice concentrate in shallow container. Combine wheat germ, flour, paprika and thyme on waxed paper. Dip chicken pieces into juice mixture, then into wheat germ mixture to coat well. Place chicken in single layer on large greased baking pan. Drizzle remaining butter and glaze over chicken. Bake in preheated 375 degree F. oven 45 to 50 minutes, or until chicken is tender, basting several time during baking. Note: Three whole chicken breast, cut in halves, may be used instead of 1 broiler fryer. |
