ORANGE GLAZED CHICKEN 
1 breast of chicken
1 tbsp. flour
1/4 tsp. salt
Dash of pepper
2 tsp. shortening
2 tbsp. frozen orange juice concentrate (add more if chicken is dry)
1/2 tsp. orange marmalade
1/2 c. water
Dash of nutmeg

Wash chicken and dry with paper towels. Combine flour, salt and pepper. Roll chicken in flour mixture. Heat shortening in small skillet; brown chicken in hot fat; add orange juice and water. Gently spread orange marmalade over top of chicken and sprinkle with nutmeg.

Simmer for 30-40 minutes or until tender. Peek occasionally and add a bit more water or juice if necessary. Serve over rice. Single serving -- may be doubled, etc.
