SQUASH APPLE SOUP 
2 tbsp. unsalted butter
1 diced med. onion
2 tbsp. minced, peeled ginger
2 med. garlic cloves pressed
2 1/2 lb. 1 inch cubed butternut squash
1 lb. Granny Smith apples, peeled and sliced
4 c. rich stock
1 1/2 c. cream
1/3 c. dry sherry
2 tbsp. lemon juice
1 tbsp. brown sugar
Salt and white pepper
1 tsp. lemon peel
1 tsp. ground coriander
